Meat Preservative Salt (Curing Salt)

It is a typical combination of salt which is used in preservation and curing of meat. It prevents food poisoning. It is oldest method of preservation by pickling or brining. Most Bacteria’s, Fungi and other potentially pathogenic organism cannot survive in highly salty environment. Eagle curing salt hypertonic nature helps the product to preserve it from the pathogenic organisms.

It also removes blood from fresh meet as it required by “Muslim dietary laws”. Eagle curing salt has different qualities but major two are, as under:

  1. A mixture of sodium nitrate & sodium chloride (for curing sausage, fish, beef etc.)
  2. A mixture of sodium nitrate, sodium nitrite & sodium chloride (for longer curing)
